Shake off the inside of the kimchi, wash it in water, remove the water, and chop it into bite-size pieces. Peel the potatoes and cut them into appropriate sizes, then put them in salt water, boil them for about 15 minutes, drain, and mash them with a potato masher. Chop the onion and carrot into small pieces and chop the green onion into half. Add the amount of mayonnaise sauce ingredients and make the sauce.

Mix the trimmed kimchi, potatoes, onions, carrots, green onions, and mayonnaise sauce in a bowl.

I think you can just think that there's more kimchi in the potato salad. If you felt a little greasy with just potatoes and mayonnaise, it's a salad that will refresh your mouth with kimchi. Moreover, I am very satisfied with the sourness of the salad made with sour kimchi. I think you can put boiled eggs in here. If you bring in more corn cans and other vegetables, you'll have another nice salad.
