Cooking Steps

Sprinkle a pinch of salt on the gizzard shad and a little pepper.

Add frying powder, cornstarch, ice, beer, and cold water and knead lightly as if holding hands.

Dough needs to be as watery as yogurt to make crispy fries.

Boil 250ml of oil in a frying pan.

Sprinkle sliced raw croaker and gizzard shad with frying powder and starch and shake it slightly.
