The eggplant was in such a bad condition that I peeled it off with a filler and used it.

I cut the eggplant into three halves and cut it sideways.

Cut the green onion and chop it roughly.

I'll make stir-fried eggplants. Add 1t of oyster sauce, 1t of dark soy sauce, and 1/2t of allulose (sugar) and mix well to complete the seasoning.

Put 1T of cooking oil in a pan heated over medium heat.

Stir-fry 1t of minced garlic and chopped green onions.

If the eggplant is well-fried, turn off the heat, add pepper, add 1t of sesame oil, and mix well.

Put it on a plate and that's it.

I peeled it because it wasn't in a good condition, but it's attractive as it doesn't have a peel. It's soft, so it feels like you're steaming it! Next time, I think I'll eat it even if I peel it on purpose. If you like the texture of steamed eggplants, try peeling and stir-frying eggplants. you'll be able to feel a different charm.
* If you stir-fry too much eggplant, it will become porridge, so stir-fry the eggplant in moderation.
