STEP 1/14
Prepare the young radish kimchi that is cooked sourly. You can put in as much Chonggak kimchi as you want. I like it with a lot of kimchi, so I put as much as a chicken.
STEP 2/14
If you go to the mart, the chicken sold for braised spicy chicken is cut into small pieces, so you can use it comfortably. It's cut, but sometimes the intestines are stuck together without being completely removed. So it's better to wash it clean and remove the intestines thoroughly. The intestines can smell like chicken.
STEP 3/14
Wash the chicken thoroughly and soak it in water for 5 minutes with 3T of vinegar for disinfection.
STEP 4/14
Rinse the chicken in vinegar water.
STEP 5/14
Add 4T of soy sauce, 2T of red pepper powder, 1T of red pepper paste, 1T of minced garlic, 1T of sugar, and a little pepper and mix well.
STEP 6/14
Pour enough water into the pot to cover the chicken and bring to a boil.
STEP 7/14
When the water starts to boil, throw away the water and rinse the chicken. If you parboil it once to remove impurities, you can eat cleaner and odorless chicken.
STEP 8/14
It's refreshing just to see the end of chicken preparation. The inside is not cooked, but the outside is slightly cooked.
STEP 9/14
Place the young radish kimchi on top of the trimmed chicken. You can put the young radish kimchi under the chicken.
STEP 10/14
Add the prepared sauce, please.
STEP 11/14
Pour enough water to cover the chicken and boil it. Cook until the chicken is cooked gently. I think I boiled it for 30 to 40 minutes.
STEP 12/14
When the chicken is cooked enough, slice a potato and add it. You can skip potatoes, but I like potatoes. If you boil the potatoes from the beginning, they'll all get crushed. When the chicken is cooked, put it in and when the potatoes are cooked, turn off the heat and eat it.
STEP 13/14
If the chonggak kimchi is cooked to a certain extent and the chicken is cooked to a certain extent, cut and mix Cheongyang red pepper and green onion. Boil it for 1-2 more minutes and eat it.
STEP 14/14
It's done! I was surprised because it was so much better than I thought. I think it'd be good to eat braised spicy chicken with Chonggak kimchi instead of samgyetang that everyone eats on the day of the dog.
