I lived in China for a long time. I lived in Beijing, China, for almost 10 years. Maybe that's why sometimes I feel like Korea is a foreign country even though I'm Korean. Now that the COVID-19 quarantine guidelines have been eased and the sky road has been lifted, I want to go there as soon as possible! The reason why I want to go as soon as possible is because I eat right away rather than anything else. Some of you might think, "Oh, just for food?" But most of my international students in China agree. Today, I especially thought of stir-fried rice noodles near my school. It was a place that opened at an ambitious time like a night market, and there were a variety of food vendors, starting with Chao Hefen, a stir-fried rice noodle, to stinky tofu and malatang. Among them, I liked Chao Hefen the most. A young man was the owner of the restaurant, and I remember that the street stall restaurant always had a long line because the fried rice noodles tasted good. Oh! I released too much TMI. Let's get down to business. Anyway, I wanted to eat stir-fried rice noodles, so I made it using the ingredients at home. Let's see how to make Chinese stir-fried rice noodles?

Cooking Steps
STEP 1/23
Soak rice noodles in lukewarm water for more than 2 hours.
STEP 2/23
If the rice noodles are soaked enough, please prepare other ingredients.

Slice shallots thinly.
STEP 4/23
Cut the chives into finger lengths.
STEP 5/23
Chop up the rat poop peppers.
STEP 6/23
Chop the carrots, please. I simply used Som Tam Chopping Knife.

It's seasoning ingredients. From the right side, it's raw chu, nochu, and oyster sauce. Sanchu is similar to Korean soy sauce. Unfortunately, there is nothing similar about Nochu. You'd better use nochu, but if you don't have it, please replace it with dark soy sauce. For your information, nochu is an ingredient used to cook dishes that give off a strong flavor or sk color. If you use nochu, it has the effect of adding caramel pigment. In Korea, some jokbal shops use caramel pigments instead of caramel pigments to create color.
STEP 8/23
In a bowl, mix 1T of raw pepper (dark soy sauce), 1/2T of nochu, 1T of oyster sauce, 1/2t of chicken stock.

Place 3T of cooking oil in a heated pan.

Please break the egg and put it in. You can beat the egg and put it in, but this is what most people do in China. Do as much as you want.

Stir quickly to make scrambled eggs.

Add 1T of minced garlic and stir-fry.

When the garlic flavor comes up, add shallots and stir-fry for 1-2 minutes.

Add 1/2C water and stir-fry.

When the noodles absorb all the sauce, add the bean sprouts and carrots and stir-fry for 2-30 seconds.

Remove from heat and add chives and red pepper and mix well. (You can add the rat-dung peppers from the beginning. I put it in at the end to take a picture.)

It was a pretty good dish, not exactly the same taste as Chaohefun because the ingredients were different from those of then, but not bad to soothe the longing. And without saying much to my partner, I made stir-fried rice noodles for dinner, and as soon as I ate it, he said, "It tastes like that Chao Heopen restaurant." I was so proud. You can make it without difficulty if you only have nochu, so please try it.
