The soy sauce is almost boiled down. When you can't see how much soy sauce is left because of the bubbling up of the soy sauce, turn off the heat and check. When the soy sauce is almost boiled down, add 1 tablespoon of sugar to add color to the potato and make the starch syrup.

Lastly, add a tablespoon of sesame oil and stir it. That's it. Finally, braised potatoes are done. ^^
