There's nothing like young radish in summer. These days, I go grocery shopping at the mart, not the market day. There are times when you can't meet the market date, and the day is hot, so the mart is better than the outdoors. The sweet cabbage and young radish sold at the mart seem to have a small amount. When I bought a single layer of sweet cabbage from the mart and made kimchi, it was salted and the amount was not much. It's frustrating because the amount is too small after trying hard to put it in.

Cooking Steps
STEP 1/11
I bought one layer of sweet cabbage and two layers of young radish from the mart.
STEP 2/11
The roots of the sweet cabbage were cut off, yellow leaves and rich leaves were removed, the ends of the leaves were cut off, and the long outer leaves were cut into easy-to-eat lengths, and the small leaves were cut in half and trimmed. Cut off the roots of young radish, remove the yellow leaves, and the thick leaves, cut the tip of the leaves, and cut them into edible lengths.
Wash the trimmed sweet cabbage and young radishes in running water and sieve them.

Place the washed young radish and cabbage on the floor in a large bowl. And prepare 1 cup of sea salt and sprinkle salt evenly on top. Then cover it with a layer of young radishes and sprinkle salt repeatedly. Then, add the remaining salt in 3 cups of water and stir evenly to sprinkle over the salted young radishes. Marinate for two hours. Turn up and down in the middle of pickling.

Put 13 tablespoons of clear fish sauce, 2 tablespoons of plum extract, 3 tablespoons of minced garlic, 1/2 tablespoons of minced ginger, and 12 tablespoons of red pepper powder in a seasoning bowl. For your information, I used red crab fish sauce.
