Making Thai Coconut Milk Soup Tomkakai
"Tom" means boiling, "Ka" is a spicy vegetable called Galangal, and "Kkai" refers to chicken dishes. The meaning of the name Tomkakai is a soup boiled with galangal and chicken. It's a dish that has coconut milk in it, is sweet and creamy, and has galangal, lemon grass, and coffee lime leaves, and has a sweet and sour taste. I was actually one of the people who didn't like coconut milk itself, so I was really embarrassed when I first ate food with coconut milk in Thailand. But during the long trip, I kept eating it, and it became a dish that came to mind from time to time! I'm talking for a long time today, too. Let me tell you the recipe.

Cooking Steps

Cut the lime into small pieces. I squeezed the juice and washed the skin clean because I was going to put it in the soup.

I cut the shallot in half. Please adjust it according to the size.

Please cut the eggplants in half. If you use Korean eggplants, you can cut them into bite-sized pieces that are good to eat.

I also cut the mushroom in half.

I cut the lemon grass sideways.

When the ingredients are ready, add a cup of water to the pot.

And a cup of coconut milk. (If you don't like the concentration of coconut milk, cut the capacity in half and add more water as much as you reduce.)

It would be nice to serve chicken broth, but please add 1 ton of chicken stock.

* Galangal, lemon grass, and capiar lime leaves are unfortunate, but there are no alternative vegetables. * If there is no lime, use lemon, lemon juice, etc. (If you add 3-4T of the juice type, it will be good.) * Replace the red and blue peppers with red and blue peppers. * You can replace the Thai eggplant with the Korean eggplant. * I'd like to replace shallots with onions. * Replace the palm sugar with sugar, but reduce the amount by half
