Making Thai Shrimp Noodles with Kung-Op-Op-Unsen
"Koong" means shrimp, and "Op" means a cooking method that is steamed. Unsen refers to mung bean noodles in Thailand. The shrimp and thin mung bean glass noodles are added with sweet soy sauce seasoning, which tastes similar to Korean japchae. Therefore, it is a food that people in Korea have no resistance to. If you eat it with warm rice, it's like rice thief. I made a recipe to make it as similar to what you eat in Thailand, so don't be disappointed if you don't have any ingredients. You can make it with substitute ingredients or without spices, so don't worry too much about it. Then, shall we make it'

Cooking Steps
STEP 1/31
It's Unsen if you eat mung bean thread. The picture of the product packaging is also Kung-Op-Op-Sen.
STEP 2/31
I'll start by soaking the glass noodles in lukewarm water. You can soak it for more than 10 minutes.
STEP 3/31
Please prepare the ingredients. For your information, you can cut the chives into 5cm long pieces and use them. I used it because I had chopped chives at home.
STEP 4/31
I cut the ginger into pieces so that it's easy to pick out. If you don't mind eating it, you can slice it and use it.
STEP 5/31
Divide coriander into leaves and stems. Stir-fry cilantro stems with noodles, and add cilantro leaves at the end. I like celery instead of coriander. In fact, some local Thai restaurants used coriander and some used celery. There are places where we use it together. If you don't like spicy vegetables, you don't have to add them at all. Please make it to your liking.
STEP 6/31
Please cut pork belly into finger sizes. For your information, it doesn't matter which part you use. You can use minced meat.
STEP 7/31
I'm going to make the sauce now. The product on the left is CUKAO, which is like soy sauce in Korea. The taste is slightly sweetened with soy sauce. The product on the right is Chinese Nochu. Originally, we should use a material called Sea Yudam, but we used a similar Chinese ingredient, Nochu. I have no teeth! If you do, please use dark soy sauce.
STEP 8/31
Please add 1T of Ciyukao (Korean soy sauce, please.
STEP 9/31
Add 1T of oyster sauce.
STEP 10/31
Add 1/3t of seed yudam (nochu/dark soy sauce).
STEP 11/31
Put in a ton of sugar.
STEP 12/31
I'd like 1/2t of chicken stock, please.
STEP 13/31
Lastly, please add a cup of water (200ml).
STEP 14/31
If you stir it well, the seasoning is complete.
STEP 15/31
The noodles are all soggy. Drain through a sieve.
STEP 16/31
I used a deep pot to make it a steamy 'op' way. Add 3T of cooking oil to the heated pan.
STEP 17/31
Add ginger to make the scent.
STEP 18/31
When the ginger flavor comes up, add the pork belly and fry it.
STEP 19/31
Stir-fry it well.
STEP 20/31
Put in the shrimp, please. Grill the shrimp like it's frying.
STEP 21/31
When shrimp changes color, add minced garlic.
STEP 22/31
Cook while patting the shrimp head. Delicious ingredients come out.
STEP 23/31
When the shrimp is 80% cooked, I'll add cilantro stems.
STEP 24/31
It's time to put the noodles in. Please make a table for the noodles.
STEP 25/31
Put in the noodles, please.
STEP 26/31
Pour in the sauce and mix well.
STEP 27/31
Then add the chives and stir-fry, cover and cook as if steaming.
STEP 28/31
When I opened the lid, it looked steamed well.
STEP 29/31
Add 1/4t of pepper.
STEP 30/31
Please finish with 1/2t of sesame oil. If there's a lot of sesame oil, it tastes like japchae, so please keep that in mind. If you want the taste, you can use plenty.
STEP 31/31
I put the kung-op-unsen in a bowl and finished it by putting the selected ingredients, fried shallots and coriander. It is similar to Japchae, but it is an attractive menu with a unique taste of stir-fried cilantro. Make it delicious and eat it.
If you add cilantro, it's an exotic dish, but if you don't like cilantro, make it without it. But it's still good.
