In addition to the basic ingredients of eggplant, pumpkin, and tomato, you can add other vegetables to your liking The color is so pretty with paprika. But I made it as a basic one^^ Eggplants and pumpkins are easy to get, inexpensive, and nutritious vegetables. Kids don't eat much, but they're my favorite vegetables :)
STEP 2/18
Cut the eggplant, pumpkin and tomato into appropriate thicknesses (about 0.5cm) so that they are not too thick. The zucchini pumpkin is big, so I only used half of it

Bake eggplants and pumpkins in a dry pan. Grill with a little salt and pepper.
STEP 4/18
Bake until golden and set aside on a plate

STEP 13/18
And put eggplants, pumpkins, and tomatoes on top of each other. The tomato was big, so I cut it in half

Put the lid on the bowl and heat it up on low heat
STEP 15/18
I sometimes put grana padano cheese on top or mozzarella cheese on top and bake it in the oven. I wanted to enjoy the taste of vegetables, so I skipped cheese and sprinkled a bit of Parmesan cheese powder
STEP 16/18
I also baked bread and served it with it. I cook pasta and mix it with sauce. If I wrap it in tortilla, it becomes burrito. I bake bread or baguette and eat it together
