STEP 1/11
Remove and trim the tough leaves of the sesame seed. There's not much soil on the sesame seed, so there's not much to trim. Actually, it's not sesame seed, but perilla leaf. Sesame seeds and perilla seeds are similar, but different. Perilla leaves are also common perilla leaves.^^ That's what I call sesame leaves and sesame leaves.^^
STEP 2/11
Add 1 tablespoon of salt and when the water boils, turn off the heat, add the trimmed sesame seeds, and quickly stir and blanch for about a minute. Don't blanch sesame seeds for too long, and you just need to be breathless. If you blanch the sesame seeds when the water boils, the sesame seeds that soak in the water turn black, so when the water boils, turn off the heat, and then add the sesame seeds and stir it, and you can blanch them all in green
STEP 3/11
Rinse the blanched sesame seeds several times with cold water before cooking them further with the remaining heat.
STEP 4/11
At this time, the wide sesame seeds are torn vertically while washing
STEP 5/11
Don't squeeze the water too tightly, squeeze it to keep it slightly moist, and if you remove it too much, it dries when stir-fried, becomes stiff and tough.
STEP 6/11
Chop 1 tablespoon of green onion only on the white part. Because the sesame seeds are green, if you put green onions and green leaves in them, it doesn't show, and it creates gin, so only the white part is added.
STEP 7/11
In a frying pan, add 1 tablespoon of chopped green onion, 1 tablespoon of garlic, 1/2 tablespoon of dark soy sauce, 1/2 tablespoon of fish sauce, 1 tablespoon of perilla oil, and 1 tablespoon of sesame salt to make the seasoning. If you add perilla oil, which is the same kind of stir-fried sesame seeds, it smells good and tastes good.
STEP 8/11
Add sesame seeds to the sauce and season evenly.
STEP 9/11
Turn on the heat and stir-fry it. It's blanched once, so you don't have to stir-fry it for a long time, it's just a little dry, and the garlic and green onions are cooked
STEP 10/11
Add 1 tablespoon of sesame seeds and finish.
STEP 11/11
Stir-fried sesame seeds and seasoned perilla leaves are done.
If you boil and stir-fry it once, the texture and taste are better. When blanching, boil water, turn off the heat, and then blanch it with sesame seeds to make the color blue.
