Remove the skin of the carrot with a filler and shred it into thin slices.

Put the shredded carrots in a bowl, add 0.2T of salt, and marinate for about 10 minutes. Pickle the shredded carrots until they are soft.

While marinating, make sauce. Add 1T of olive oil, 0.5T of whole grain mustard, 0.5T of sugar, 1T of lemon juice, and pepper and mix well.

After 10 minutes, remove the water from the pickled carrots with a kitchen tower and lightly mix them with the sauce.

If you ripen it for a day and eat it cold, the texture is more crunchy and refreshingly delicious.
It's convenient to use a chopping knife. When you pickle carrots, make sure that the amount of salt is not salty and suits your taste.
