STEP 1/14
I prepared ingredients to make Spam Mushroom Stir-Fried & Rice with Rice.
STEP 2/14
I cut off the bottom of the mandarin duck and took off the strands. You don't have to wash mushrooms.

Shred the spam and onions.
STEP 4/14
Beat 3 eggs with 1 tablespoon of cooking wine, 1 tablespoon of tsuyu, and pepper.
STEP 5/14
Put 2 tablespoons of olive oil in a royal pan and stir-fry the whole garlic on medium heat for 1 minute until it is half cooked, then add spam and 1 tablespoon of sugar.
Stir-fry spam and garlic until golden and transfer to a bowl.

Add 2 tablespoons of olive oil and stir-fry the onions half-cooked in the middle heat with sliced green onions, red peppers, and onions. Add mushrooms and stir-fry them over high heat until they die.

Add 1 tablespoon oyster sauce, mix, and turn off the heat. Add 1 tablespoon sesame oil and toss.
STEP 8/14
Mix the stir-fried mushrooms with spam and garlic from Step 5.
STEP 9/14
Pour 1 tablespoon olive oil into a frying pan over medium-low heat and pour egg water. After 30 seconds, stir with a wooden spatula. When the egg is slightly undercooked, turn off the heat and cook it over the residual heat while stirring a little more, and it becomes a softer scramble.
STEP 10/14
Add 1 tbsp starch and 2 tbsp water and stir well. If you make starch water, the starch sinks to the bottom, so you can stir it well with a spoon.
STEP 11/14
Remove half of the stir-fried spam mushrooms and add 150ml of water. Add 2 tablespoons of tsuyu and season it. When it boils over high heat, reduce to low heat, pour starch water little by little, and thicken. Put it in the scramble of Step 9.
STEP 12/14
After mixing, turn off the heat and mix it with pepper, 1 tablespoon sesame oil, and 1 tablespoon chopped green onion.

It's really good even if you eat it with stir-fried spam mushrooms.
STEP 14/14
It's so delicious even if you eat it with rice. Especially, it was delicious because it was so seasoned in a soft scrambled egg.
You can make two dishes at once, stir-fried mushrooms and rice topped with mushrooms.
