Slice the chives to garnish and thinly slice the dried seaweed.

Beat the eggs with salt, put cooking oil in a preheated pan, and make scrambled eggs.

Remove scrambled eggs separately.

Microwave tofu for 1 minute.

Mash the tofu while squeezing the water using a kitchen towel.

Stir-fry tofu in a non-greasy pan until the moisture evaporates and becomes fluffy.

Add soy sauce, oligosaccharide, mirin, sesame oil, and pepper and stir-fry them until the water is gone.

Place scrambled eggs and tofu on top of rice and add chives and seaweed to complete.

If you mix tofu seasoned with soy sauce and pepper with rice, it's light and savory.
Tofu is comfortable when you remove the moisture as much as possible.
