Cut the eggplant in half and cut it into zigzags into 3-4cm thick pieces.

Cut potatoes into dice and into appropriate sizes.

Cut paprika into squares, similar to potatoes.

Chop the green onion.

Put oil in a pot and fry potatoes over medium heat.

When the potatoes are 80 percent cooked, add paprika and fry them.

When paprika is cooked, add eggplants and fry only the outside over high heat.

Remove oil from fried vegetables.

Make seasoning with soy sauce, oyster sauce, vinegar, cooking wine, and sugar.

Add oil and green onions to a pan and stir-fry over high heat.
STEP 11/12
If it smells like green onions, add the ingredients and stir-fry over high heat.
STEP 12/12
Add seasoning at the end and stir-fry over high heat.
