How to make Beef Bone Soup Pork Tripe Hot Pot
I bought 1kg of Baekam pork tripe (about 15,000 won including shipping) trimmed on the Internet, stir-fry 500g and add beef bone broth to make gopchang hot pot. If you put gopchang and seasoning in beef bone broth, vegetables, kimchi, and boil it, there is no smell. It's become the tripe hot pot of the soup where vegetables are ground in advance and boiled enough, and it tastes deeper with kimchi It's really clean and full of gopchang. I ate it with Dottie, thinking that I could only see gopchang and not see vegetables. It's different from commercial gopchang jeongol where you can only see vegetables and no gopchang. ^^ I think it's best to make a lot of gopchang jeongol at home if you want to eat a proper gopchang jeongol with a lot of gopchang

Cooking Steps
STEP 1/9
You can boil beef bone broth or simply use commercial beef bone broth. I used it because I had boiled beef bone broth.

Soak the glass noodles in water for more than 30 minutes. To shorten the time, soak it in hot water.
STEP 3/9
Wash the pork tripe in water once, add 1 spoon of vinegar and 3 spoons of soju, and soak it for 20-30 minutes to remove the smell. The gopchang I bought had almost no smell, but they handled it for a fresher dish.

Rinse the tripe 2-3 times in water, drain, and cut it 2cm long.
STEP 5/9
Grind the seasoning in a blender and mix the red pepper powder and other seasoning.

Wash the vegetables and chop them.
STEP 7/9
Boil the beef bone broth, add tripe and 3 spoons of soju, and boil it well You have to boil it over medium heat for about 20 minutes without seasoning to make the gopchang softer.
STEP 8/9
Add vegetables and kimchi, season and simmer for another 15 minutes over medium heat. If you don't add kimchi, it's a clean taste. If you add kimchi, it tastes heavier and deeper.

Add perilla leaves and perilla seeds and season with soy sauce or salt if it is bland.
