STEP 1/8
Rinse the webfoot octopus in water and prepare it.
STEP 2/8
If you put your hand in the head and turn it upside down, you can see white eggs and intestines next to you, and only the intestines are removed by hand and turned upside down again. (They also eat the intestines as much as they like.)
STEP 3/8
The eyes under the head are trimmed with scissors, and when you turn your legs upside down, you can see a round mouth. Press the area with both hands to remove the slightly rising mouth.
STEP 4/8
Cut the head separately, add a little salt to three spoons of flour and rub it for about five minutes to remove foreign substances stuck in the sucker.
STEP 5/8
Rinse thoroughly in water. Even when rinsing, sweep the footrest several times to remove it once more.
STEP 6/8
Add a little onion, pyeonsenggang, and soju to about 500ml of water and soak it 5-6 times so that the legs go down, then take it out and repeat.
STEP 7/8
Turn your legs upside down, boil it for 30-40 seconds, and then scoop it out.
STEP 8/8
When the water boils in the steamer, add the hair you left out and steam it for 2-3 minutes.
Cut the eggs in half and place them so that the full filling can be seen, and turn the legs upside down as they are nicely boiled and plate them to complete a plate of webfoot octopus that is good to look at. You can enjoy a variety of dishes by preparing wasabi + soy sauce, red pepper paste, or perilla leaf and stir-fried webfoot octopus vegetable seasoning separately.
