STEP 1/9
1. boiling water
Boil the water collection ingredients in advance and serve the soup.
At this time, when the kelp boils for about 10 minutes, take it out, and boil the rest of the ingredients for more than 15-20 minutes to make a thick soup.
- Shiitake mushrooms are used as hot pot ingredients, and the pillars are torn according to the texture and put in when the water is boiled, it smells good.
- When the water is enough, remove the softened water.
STEP 2/9
2. boiling noodles
When the water boils, boil the noodles, rinse them in cold water, and drain them. When it boils up while boiling, pour cold water into a ladle to keep the noodles chewy.
- Udon noodles, kalguksu noodles, somyeon, glass noodles, buckwheat noodles, and sujebi are all good. Prepare according to your preference. I prefer udon noodles, but this time, I prepared somen according to my family's preference.
STEP 3/9
3. cutting vegetables
Cut green onions and peppers diagonally or roundly
Cut cabbage and shiitake carrots into pieces to make them easier to eat.
The oyster leaves the strands apart.
STEP 4/9
4. Add ingredients and boil it
All you have to do is put the ingredients in the prepared water and boil it. Add vegetables, dumplings, and seasonings (soy sauce and shiitake powder) except green onions and peppers, and boil them until the dumplings swell up. Add salt to the insufficient liver.
STEP 5/9
- In addition to the soup soy sauce, I add lemon, a little ginger, and onion to add flavor and deep taste. If you don't have it, brewed soy sauce or dark soy sauce is fine. It's a vegetarian version, so I added the scent with shiitake powder.
- If you eat seafood instead of shiitake powder, not a cooking essence or pure vegetable version, it is also delicious to use tsuyu instead of flavored soy sauce + shiitake combination.
STEP 6/9
*Plating tips
: The vegan dumplings that I used didn't let go even if I boiled them for a long time If the dumplings are a well-done type, you can put them in a microwave container and sprinkle a little water to steam them for 3-4 minutes.
STEP 7/9
5. Add chili pepper and green onion. Finish
When the dumplings are fully cooked, put green onions and peppers on top and add some pepper to finish the hot pot
STEP 8/9
I like noodles, so I put the hot pot in the hot soup and ate it together
It's delicious even if you eat hot pot first and then slurp the noodles in the soup that you ate to a certain extent. Spicy kimchi with sweet and sour seasoning soy sauce
STEP 9/9
Besides the soy sauce for dumplings
It's also delicious with ginger soy sauce and wasabi soy sauce for vegetables
2 rice spoons of soy sauce + 1 rice spoon of water + 3 cm wasabi
3 rice spoons of soy sauce + 1 rice spoon of vinegar + 1 rice spoon of shredded ginger
If you add various kinds of soy sauce like shabu shabu, the taste becomes richer
