Cooking Steps
STEP 1/10
Add enough water to soak chickpeas for more than 8 hours.
STEP 2/10
Boil water twice the amount of chickpeas soaked in water. When the water boils, boil it over medium heat for 50 minutes.

Grind boiled chickpeas finely with a blender or hand mixer. Add 1.5 tablespoons of avocado oil (or coconut oil) and half a tablespoon of vanilla extract together and grind.

In a finely ground dough, add 30g oatmeal, 1/3 salt, 40g erythritol, 40g baking powder, 1 1/2 small liquor vinegar (Apple Cider Viniger) and mix evenly.

Add the cashew nuts.

Add dark chocolate.
STEP 7/10
Mix the toppings and dough evenly.
STEP 8/10
Cut it into six equal parts. Make a circle and press it into a cookie shape.
STEP 9/10
Place in a preheated oven and bake at 180 degrees for 15-20 minutes.

The cookie is crispy on the outside and moist on the inside.
