STEP 1/5
Chop the ripe kimchi into small pieces and add the pork. Kimchi is delicious even if you cut it, but I think it's delicious even if you just cut the top and tear it long. I cut kimchi jjigae and put it in so that you can eat it comfortably with a spoon. I think kimchi stew with pork has a good rich soup taste.
STEP 2/5
Add cooking oil and stir-fry kimchi stew and pork. Stir-fry the pork until it is cooked and add sugar to capture the sour taste. You can adjust the amount of sugar according to the sourness of the kimchi. If it tastes too good, it may taste sweet, so please choose the right amount.
STEP 3/5
Season with soy sauce and salted shrimp. If you add soy sauce, you can add a deep taste, and if you add salted shrimp, you can create a cool taste. I often make kimchi stew with salted shrimp. It's good because the soup gets cooler with salted shrimp. Be careful not to burn when frying kimchi and pork.
STEP 4/5
Add water or broth to boil until the ingredients are submerged. The longer you boil kimchi stew, the richer the taste of the soup. Boil the kimchi until it's fully cooked, and the pork smell disappears. I don't think you need to add cooking wine or ginger.
STEP 5/5
After cooking kimchi stew, add green onions and tofu to make kimchi stew that is not boring. If it's too bland, you can use salt instead. If you add tofu and cook it for too long, the tofu will spread, so please boil it once. I think kimchi stew tastes better the more it boils.
