Making salted shrimp egg tofu soup with clear soup
I usually like red soup, but I also like clear soup that much. So I made a simple egg tofu soup with salted shrimp. It's a good recipe to eat neatly.

Ingredients
  • Water
    900ml
  • Tofu
    300g
  • leek
    1piece
  • Eggs
    2ea
  • Cheongyang red pepper
    1ea
  • anchovy broth
    1ea
  • salted shrimp
    2/3T
  • the liquid of tuna
    1T
  • crushed garlic
    0.5T
Cooking Steps
STEP 1/8
Pour 900ml of water into a pot, add a stock pack, and simmer for about 10 minutes.
STEP 2/8
Cut the pier into bite-size pieces, too.
STEP 3/8
Beat in 2 eggs and prepare them.
STEP 4/8
Remove the stock pack and add 2/3T of salted shrimp and 1T of tuna liquid.
STEP 5/8
Add all the chopped tofu to the well-boiled broth. And when the soup boils, add the beaten egg.
STEP 6/8
When the eggs are done, add 0.5T of minced garlic.
STEP 7/8
Add the last chopped green onion and cheongyang red pepper. Please wait for at least 1 minute for Cheongyang red pepper and green onion to cook.
STEP 8/8
It's a refreshing clear soup style salted shrimp egg tofu soup.
You have to add the eggs and wait a little before stirring so that it doesn't get messy.
