Octopus over rice, from octopus preparation to secret sauce, a b
I don't remember what kind of program it was, what kind of entertainment show it was, or who came out, but I only remember that it was a restaurant in line and that the representative menu of the restaurant was octopus over rice. I don't want to waste my time waiting at famous restaurants even if I go to Jeju because I don't have a tendency to look for good restaurants, so I was thinking about making it anytime.

Cooking Steps
STEP 1/21
I bought it for an octopus event at the mart and thought of making rice with toppings after purchasing it. Normally, octopus is eaten as raw fish, but I'll try to imitate the good restaurant food!!
STEP 2/21
Let's start with preparing the octopus.
When you take care of children such as octopus, octopus, squid, etc., you should clean the paper board.
There's nothing like flour in a straw wash.
There are slight differences in grooming methods depending on the type.
If you put your head up and turn it upside down, you can remove all the organs inside.
And remove the mouth between the legs.
STEP 3/21
After that, you can sprinkle flour and rub it.
Then, the mud and foreign substances in between the suckers are tangled with flour and removed.
STEP 4/21
If you've rubbed enough with flour, you can wash it off now.
It's an octopus that's been trimmed.
There were two octopuses I bought at the mart.
I'm going to use the relatively big one for today's bowl and the small one just blanch it and freeze it.
Freeze and store octopus, and use it as an ingredient when necessary.
Or you can just eat it as Sukhoe^^
STEP 5/21
Now I'm going to blanch the octopus.
You can blanch octopus in bottled water, but I'm going to blanch it coolly with radish.
Octopus goes well with radish^^ (There's no basis for that~^^;;)
I'll blanch the octopus in boiling water with radish.
STEP 6/21
When you parboil an octopus, put your legs in first to shape it
STEP 7/21
Put the blanched octopus in the cold door~~~
We're going from hot to cold^^
STEP 8/21
Let's move on to the rice bowl.
Trim the vegetables.
Prepare carrots and onions by slicing them.
I used up one onion.
And I use about a third of carrots.
It's not that much because it's near the roots^^
STEP 9/21
Grease a heated wok.
And I'll stir-fry the onions first.
When you stir-fry onions, add salt and pepper!!
STEP 10/21
When the onions and carrots are cooked to a certain extent, make the sauce.
STEP 11/21
The seasoning is simple.
There will be more ingredients in the actual dish, but I'll make it simple.
I drove the vegetables to one side and tilted the wok.
It's to boil the soy sauce.
Pour in the thick soy sauce moderately.
If the soy sauce is too much, you can add water.
If there's less soy sauce, you can add more soy sauce later^^
Just put it in moderately~
And put in soy sauce and sugar right away.
I added a spoon and a half of sugar to the amount of soy sauce shown in the picture above.
STEP 12/21
When the soy sauce boils, mix it with the stir-fried vegetables and add half a spoon of minced garlic.
And I added a little bit of water.
STEP 13/21
Lastly, add red pepper powder.
You can adjust the amount of red pepper powder to suit your taste.
Both my wife and I like spicy food, so I put in a little too much.
I turned off the heat after boiling it for a while.
STEP 14/21
I'll prepare the octopus.
I'm going to cut the octopus between the legs in the middle of the mouth.
Take care of the head and cut the legs one by one.
And I'm going to make cuts on the legs.
STEP 15/21
I made a cut to make a visual like the picture above.
I used a kitchen knife that I bought at Chunnyang Mart~^^
STEP 16/21
I left a head and two legs.
I'm going to eat this as raw fish.
STEP 17/21
Now that I'm done preparing the octopus, I'm going to heat it up again.
Then add the octopus legs~
It's a shame that the octopus is small, but it's still octopus^^
STEP 18/21
Cook it until the sauce seeps in~~~
STEP 19/21
Put rice in a bowl.
Put the rice according to the amount and put the sauce on top
STEP 20/21
I put an octopus leg on it.
After organizing the octopus legs and putting it on top of it, I cut the green onions and put it on top.
And the ending is breaking ^^
Sprinkle sesame seeds and it's done~~
STEP 21/21
It's octopus sashimi to eat with octopus rice.
