Eggplant dish, sweet potato eggplant gratin diet
Stir-fried, steamed, grilled... There are various recipes for eggplants, but I made eggplant gratin with my children and even as a diet meal^^ It's more delicious than you think, so make sure to make it!

Cooking Steps

First, trim the vegetables.
Chop the eggplant, onion and tomato into small pieces

Grease a well-heated pan lightly, add dried tofu to a kitchen towel and beat to dry.

If the tofu has lost some moisture, add the meat and onions and stir-fry again.
STEP 4/9
When the meat is cooked, add the eggplant and tomatoes lastly and stir-fry over high heat, mixing all the ingredients.

Mix the oyster sauce and ketchup to enhance the flavor.

If the ingredients are ready, this time, sweet potatoes!
Cut the well-cooked chestnut sweet potato in half and scoop out the sweet potato to make a bowl for the filling.

If you have made a sweet potato bowl, fill it with the ingredients of the fried tofu.

Put mozzarella cheese on top of that
Cook in air fryer or oven until cheese melts.
I turned it around 180 degrees for 7 minutes.

It's very fast and thanks to ketchup, it tastes like pizza. It's a nutritious snack that kids eat well^^
