This is a shiitake mushroom from Geoje farmer that I really like.
The mushrooms are so hard and strong, and above all, they smell so good.
Farmers' mushrooms are not always available for purchase, so buy a lot when the purchase window opens and store them well.

Wash the shiitake in water once, cut the bottom, and slice it.

Cut the bottom and blanch the salt slightly (about 20 seconds) in boiling water.
