Recommended as a side dish for babies' cucumbers, a low-salt die
There are a lot of cucumbers in the summer. In summer, I often make cucumber side dishes with cucumbers from the garden. The cucumber side dish I'm introducing today is easy to make, so it's good to make in a hot summer.

Rice-cozy cucumber salad uses cucumbers with its skin, so rub them with salt to wash them.

Cut cucumbers into bite-size pieces. If you're going to make a baby cucumber side dish, cut it a little smaller.

We cut it into sizes that are good for adults to eat in one bite. You can cut it into 2~3cm sizes.

It's slightly pickled. If you do this, the liver will soak in moderately and it won't be salty. I only leave it in the fridge for about 3 hours. If you are on a low-salt diet, you can reduce the time to pickle to about an hour.

Pickle it using a salt coil made of rice coil. The salt nose itself has a proper flavor, so it's good even if you just pickle it like this way. If you don't have a salt nose, you can use regular salt.

Shake it and go to the refrigerator!!

While waiting, slice the red pepper diagonally. The color looks prettier like this. If you're going to make a baby cucumber side dish, you can take out the peppers.

You can remove the moisture and use it to season other side dishes. Only when you use a sweet salt nose!! You can throw away regular salt because it's salt water anyway!

Add the spices and mix. If you're on a low-salt diet, this is enough for you. If you're a regular eater, you can adjust the soy sauce and season it a little stronger.

This is how you wrap the pickled cucumber and leave it in the refrigerator for a day before eating it! It's good to mix it in a side dish container and keep it refrigerated.
3 spoons of salt koji can be replaced with 1 spoon of regular salt, 1 spoon of soy sauce can be replaced with 1 spoon of thick soy sauce, and 1 spoon of rice koji oil can be replaced with 1 spoon of sugar.
