Cooking Steps
STEP 1/10
Dip the ribs in cold water for an hour to drain the blood.
Then add 1 spoon of instant coffee powder and half a spoon of soybean paste to the water and boil for 30 minutes.
I also put in the laurel leaves that my regular butcher gave me.

Wash the boiled back ribs with water.
When washing, there is blood on the border between bones and flesh, so please wash it well.
That way, it doesn't smell bad.

It's a 2-year-old simni ripe kimchi.
My father-in-law doesn't like salted seafood and ingredients, so the kimchi is so clean and light that it tastes better the longer you leave it.
Please cut the ripened kimchi's head.
If you have too much filling, it may look messy, so shake it off and use it. We put in the least amount and just used it.

Place half of kimchi in a pot and place the washed back ribs on top of it, cover the other half of kimchi, pour 200ml of bottled water and 150ml of kimchi soup, and boil it with a lid on.

And I'll make the sauce.
Add 1 tbsp ginger powder, 2 tbsp minced garlic, 1 tbsp chopped onion, green and red pepper, 1 tbsp plum extract, 3 tbsp red pepper powder, 6 tbsp soy sauce, and half a tbsp pepper. Add 750 tbsp water and mix well.

Place in boiling back ribs and simmer over high heat for about 30 minutes.

After 30 minutes, add green onions and 1 tablespoon of soy sauce and boil for another 20 minutes.
I thought there was not enough water, so I added more.
If you want to check the ripeness of the ribs and make it softer, you can boil it more.
We boiled it for the kids a little longer because they were going to eat it.
He turned off the heat and put sesame oil around him.
