Cooking Steps

Wash lotus roots, peel them off, and cut them into 0.5cm thick pieces
Soak in water for about 10 minutes to remove starch

While removing the starch from the lotus root, make black sesame dressing
First, grind 2 tablespoons of black sesame

If you ground sesame seeds, add the ingredients and make black sesame dressing

Now boil the water to boil the lotus root
When the water starts to boil, add a spoonful of salt and vinegar

Add lotus root and parboil it for 2 to 3 minutes

Rinse several times in cold water in a sieve and let cool completely by immersing it in ice water for a while

Drain and use a kitchen towel to remove any excess moisture

Put the drained lotus root in a large bowl and add the black sesame dressing

Just mix it gently so that the lotus root doesn't break
You have to cut lotus roots and soak them in water to prevent browning!
