It is true that soju is used a lot to put pickled vegetables, but it has more flavor. However, it is also true that it is a luxury to add soju to pickles in our Toronto family. I want to use soju to drink fruit and pickle, but the price of soju is so high that my heart is chewy, so I went to LCBO a few times with a big heart. I tried to find soju by pushing the fact that it costs more money to exhaust dried radish, but I heard that it has been a long time since I came in. In addition, as I couldn't get it after visiting a couple more places, I felt a fundamental desire to win at any time, and eventually brought it from an acquaintance who runs a Japanese restaurant with his personal connections, so I finally completed making dried radish pickles. Cooking Steps
STEP 1/10
Soak the dried radish in lukewarm water, add 2 spoons of sugar, rub it, and let it soak for 10 minutes.
STEP 2/10
Cut onions and peppers into appropriate sizes and slice ginger.
STEP 3/10
Grill the sliced ginger slightly in an ungreased pan.
STEP 4/10
Add the amount of soy sauce water ingredients and boil it. Boil the kelp over medium heat for 6 minutes, boil it for 2 more minutes, and cool it down.

Squeeze the dried radish for 10 minutes
STEP 6/10
Put the prepared vegetables and grilled ginger together.
STEP 7/10
When the soy sauce water cools down, add vinegar water ingredients and stir well until starch syrup dissolves.

Pour pickle water into the prepared vegetables
STEP 9/10
Press it slightly so that it locks.
STEP 10/10
Store it at room temperature for about 3 days and refrigerate it to eat.
If you grill ginger and use it, it tastes better. If you soak the dried radish for too long, it will get loosened, so try to get it within 10 minutes. Spicy peppers also make it taste good. But the sweet vinegar is very spicy, so adjust it to your taste.
