Medium-sized shiitake mushrooms can be dented and poured a lot of eggs if you pick up the top and break it with your hands.

If you cut the round part of the elevation in the shape of a cross or flower, it will ripen better and the shape is pretty.

This is the most important thing. If you just pour the eggs, the mushrooms are bland. Sprinkle mushrooms with enough salt and pepper.
I think I put it on for a few tens of minutes while I'm sprinkling it and cooking another dish.
It's a simple dish that takes less than 30 minutes to cook right away.

Chop peppers, carrots, green onions, onions, and back into small pieces.

Add chopped vegetables to the egg and season with salt. I squeezed 2 eggs and 1 tsp salt so that it wouldn't overflow, and it was well seasoned.
Mix it well.

Scoop the egg on top of the shiitake with a spoon and cook it back and forth in a pan covered with cooking oil.
If shiitake mushrooms are too big, they are pretty even if you cook them thoroughly and cut them and put them on a plate.
