STEP 1/15
Separate 4 eggs into white and yolk.

Whisk egg whites using a whisk.

Add 1/3 of 70g of sugar and whip it again.

Add sugar three times and whip.

Whip egg white meringue until firm. It's done if it's shaped like a horn.

Add 2 egg yolks to this and whip it again.

Add the remaining 2 eggs and whip the rest.

Put 100g of soft flour through a sieve.

Please knead it with a spatula.

When the dough is complete, add 30g of melted butter in the microwave.

Knead the melted butter as if cutting it with a spatula.

Pour the dough into the air fryer with paper foil. And level the dough by tapping it to make it is flat.

Bake at 150 degrees for 30 minutes.

After 30 minutes, poke the castella with chopsticks and if there's nothing on it, it's done. Cook a little more if there's anything that comes out.

Airfryer Castella with a good soft texture is complete!
Whip the meringue until firm as a horn.
