Peel the colibee thickly.

Cut into desired shapes. If there is a tough part while cutting, please cut it. It bothers me when I eat.

Add carrots and mix with salt. Carrots are an optional ingredient.

Add whole pepper, pepperoncino, bay leaf, etc. I also put in colabi leaves.

Add 150ml of persimmon vinegar.

Add 40ml of plum balsamic vinegar.

Add 10ml of fermented ginger.

Add 30ml of lemon juice.

Add 100ml of white wine.
STEP 10/11
Add 50ml of plum extract and cover and shake to mix well.

There was not much water coming out of Colabi, so I changed the location of Colabi once in a while. You can eat it right away or leave it for a day.
You can easily make it with 2(1) water, 1 vinegar, 1 sugar, and a little salt.
