STEP 1/15
Pour the almonds into the baking pan. Bake at 325F (163C) for 12-15 minutes.

Chop the baked almonds into small pieces. Put it on the side by side.

Mix dry ingredients together. Put the bowl aside.

In another bowl, combine eggs, olive oil, lemon zest, vanilla extract and almond extract.

Pour in the sliced roasted almonds. Mix with spatula.

Divide the dough in half and make it into a flat log.

Bake at 325F (163C) for 30 minutes. Let cool for 10 minutes.

Slice the cookies to inch thickness.

Place sliced biscotti cookies on baking pan. Bake at 325F (163C) for 9 minutes.

Remove the cookies from the oven and turn them. Bake at 325F (163C) for another 9 minutes.

Melt the chocolate in the microwave. Dip the biscotti in the chocolate.

Sprinkle chopped almonds over chocolate.
