I made a recipe with the existing Huinangsi, but I didn't like it, so I revised the recipe a lot,,, v This time, the edge doesn't turn off, and the belly button is chubby. v Overall, the most delicious-looking roasting color in a whinangsi. v Whinangsi with a crisp crust, not hard. v Whinangsi with just the right amount of chewy texture for dessert. Cooking Steps
STEP 1/3
(1) Add sugar, oligosaccharide and starch syrup to the whites and mix until the whites run like water.
(2) Sift all the powder ingredients into the whites and mix until no powder is visible.
(3) Burn the butter until it turns coffee color.
(4) Place butter in cold water and lower butter temperature to about 50 degrees.
(5) Mix the butter and dough at about 50 degrees.
(6) Pipe the dough 30g at a time.
(7) Flatten the dough by impacting it.
STEP 2/3
(8) Please keep the dough in the refrigerator.
(9) When the dough temperature reaches 10 to 15 degrees, bake for 6 minutes at 220 degrees in the oven, then bake for 11 minutes at 170 degrees in the oven.
