STEP 1/11
I prepared 200ml of malt and rice, and used a rice cooker for 10 people
If you don't have it for 10 people, I'll show you how to make it with a small rice cooker
You need to prepare 300g of malt in 4 liters of water
I used it as it is because it's a lot
STEP 2/11
First, soak the malt in lukewarm water
If you soak it in lukewarm water for an hour (while cooking)
It's soggy that it's really good
STEP 3/11
Put the soaked malt into the cotton cloth and rub it
If you pat it while replenishing the water, the water will come out white
STEP 4/11
After making malt water, there's only sediment left, but this sediment is thrown away
If you put all the malt water in
When you make sikhye, the color is dark and it's not clear
STEP 5/11
I wash the rice and cook it with the rice cooker
STEP 6/11
When the rice is ready, pour half of the malt water and add 2 tablespoons of sugar to keep it warm
If you add a little bit of malt water and let it soak, it takes less time
STEP 7/11
While the rice cooker is cooling, add the remaining malt water
Put it in a pot, add 1 cup of sugar, boil it boiling
You have to remove the foam to make the soup clear and clean
STEP 8/11
When you boil the fermented sikhye, put some rice grains in a strainer and rinse it
Store it in an airtight container with water
If you put a little bit of sikhye in the bowl, the rice grains can be pretty
STEP 9/11
Put the fermented malt water in a pot
Put 3 pieces of sliced ginger in the freezer
Add 1 cup of sugar and boil it
If you eat it while boiling, it might taste less sweet, but it might taste sweet when it cools down
I don't like sweets, so I reduced the amount of sugar. Please add or subtract sugar depending on your preference
When it boils up, lower the heat to medium and boil for 5 more minutes
You need to remove the foam to get a clean sikhye
STEP 10/11
The way to save time when making sikhye with an electric rice cooker is
Put half of the water in the rice cooker and boil the other half separately
It's a bit cumbersome to boil the malt water separately, but while doing other things in the kitchen
It's not that bothersome to boil malt water over medium low heat
It's also a way to make 4 liters of water sikhye with a small rice cooker
STEP 11/11
Put sikhye in a bowl and add a spoonful of rice
If you put pine nuts and dates on top
It looks pretty, clean, and delicious. Sikhye is done
Wait! The rice cooker is too small
When you make sikhye with a small rice cooker, add malt water to the rice
Add some sugar and let it cool
I put 2 tablespoons of sugar in a small amount and fermented it, and in an hour and a half, the rice was fermented well
If it's fermented for a long time, it smells bad, so when the grains start to come to mind, I'll pull out the chords
