Wash the enoki mushrooms, shake off the water, and slice them.

Cut the green peppers in half, remove the seeds, and chop them into small pieces.

You don't have to put it in if you don't have it, but if you have any leftover vegetables such as paprika, bell pepper, carrot, or onion in the refrigerator, chop them into small pieces and prepare them.

Prepare canned tuna by removing all the fat

Put the cut enoki mushrooms, green peppers, vegetables, and canned tuna in a bowl

Sprinkle 2 tablespoons of cooking wine, 1/3 tablespoons of salt, and pepper

Add 2 tablespoons of sesame oil. It's sesame oil that goes well with tuna, so I added enough two tablespoons.

Mix it well so that it's moist and coagulated well. We don't add water separately.

Add mozzarella cheese and mix well. If the dough blends well, add oil and fry it.

Grease a heated pan over medium heat, scoop up a spoon each and fry it. You can make it as big as a pancake or as small as you want.

You can fry it until it's golden brown. It's a way to make tuna enoki mushroom pancake that you can fry well even if you put it on medium heat.
