Please prepare the ingredients first.
You need 2 green onions and 1 onion.

Please trim the vegetables.
Slice 1/3 of the green onions thinly like green onions, slice the remaining green onions big enough to fit into the pot, 1/2 of the onions thinly, leave the rest alone, cut the chives 4cm apart, and wash the ginger and garlic in water.

Divide the whole pork belly into a pot and pour enough water to soak the pork belly.

Add the large sliced green onion, half onion, ginger, 5 whole garlic, 1 tablespoon of soybean paste, 1/4 cup of refined rice wine, 10 whole peppers, 1 dried pepper, and 4 bay leaves, and boil the water over high heat.

When the water starts to boil, reduce the heat to medium, open the lid of the pot, and boil the boiled pork for about an hour.

Please make the seasoned scallions sauce.
In a bowl, add 1 tablespoon soy sauce, 1 tablespoon vinegar, 1/2 tablespoon sugar, 1/2 tablespoon sesame oil, and a little sesame seeds and stir well until sugar dissolves.

Add chopped green onion, onion and chives to seasoned green onion sauce and mix well.

After about an hour, remove the meat and discard all the rest of the meat ingredients.

Put 1/3 cup of water, 4 tablespoons of cooking wine, 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, 1 tablespoon of starch syrup, 1 tablespoon of fine red pepper powder, and a pinch of ginger powder in a pot or pan and bring to a boil.

When the seasoning starts to boil, add the pork, turn it back and forth, and cook the sauce until it is glossy.
When the marinated seasoning is almost boiled down, turn off the heat and cut the pork into bite-sized pieces.

Place on a plate and garnish with seasoned scallions.
Rinse ripe kimchi in water or wrap it with garlic leaves, and I skipped it because I didn't have any ingredients.
