Grilled Spinach Pesto with Norwegian Mackerel
I made a unique grilled mackerel. I made pesto using spinach that goes well with mackerel and ground healthy walnuts together. The savory taste of mackerel with a lot of omega-3s and spinach pesto~It's a nice grilled dish.

Cooking Steps

STEP 2/11
Wash the mackerel quickly under running water and thoroughly wipe the water with a kitchen towel.
(Cutting the fins with scissors is recommended)
STEP 3/11
Blanch spinach in boiling water (1t of salt) for 20 seconds, wash it thoroughly and squeeze the water out.
Prepare pesto material.

Put blanched spinach, walnuts, olive oil, and sea salt in a blender and grind them again.
STEP 5/11
Sprinkle glutinous rice powder evenly on the dried mackerel and adsorb it, and put curry powder on the sieve and sprinkle it evenly on the lean side. (Don't sprinkle too much curry)

Cover the heated pan with avocado oil and place the meat side in contact with the pan first.
Be brown.

Turn it upside down and grill it.

Thickly spread spinach pesto on mackerel.

Cover with two sheets of cheddar cheese.

Bake for 3 to 5 minutes at 160 to 170 air fryers (only until cheese melts)

Transfer to a plate and cut with a sawtooth knife.
Spinach pesto has a better texture when you chew walnuts a little by little. You only use a certain amount of curry. Be careful of the bones because there might be bones in the mackerel.
