Making super simple tsuyu at home (katsuobushi, ginger)
It's a tzuyu that can be used for various soup dishes. I can make it at home and eat it with confidence.

Ingredients
  • a dried kelp
    1piece
  • Sugar
    5T
  • cooking wine
    5T
  • thick soy sauce
    20T
  • Ginger
    4piece
  • dried bonito
    3handful
Cooking Steps
STEP 1/11
Put 5T of sugar in a pot.
STEP 2/11
Please add 5T of cooking wine.
STEP 3/11
Please add 20T of thick soy sauce.
STEP 4/11
Add a sheet of kelp, please.
STEP 5/11
Boil the soy sauce, and when it starts to boil slightly, turn off the heat and let the kelp boil for 10 minutes.
STEP 6/11
Remove the kelp after 10 minutes.
STEP 7/11
Add 4 pieces of dried ginger and simmer for about 5 minutes.
STEP 8/11
Please prepare about 3 handfuls of katsuobushi.
STEP 9/11
Add katsuobushi to the soy sauce broth and let it boil for about 3 minutes.
STEP 10/11
Filter the soup separately on the strainer tray.
STEP 11/11
Handmade tsuyu with good scent is complete with katsuobushi and ginger!
