I only used 1/4 of the ripe kimchi.
Our aged kimchi has a large cabbage, so using only 1/4 was enough to pack 2 bowls of rice.

Shake off the seasoning of the ripe kimchi, wash it in water, and squeeze the water out.

And prepare 2 bowls of rice, stir-fried anchovies, sesame oil, and sesame seeds.

For stir-fried anchovies, I used stir-fried anchovies
I cut the anchovies of the stir-fried anchovies into smaller pieces with scissors in case they get stuck in my throat because a 7-year-old child will eat them together.

Spread washed ripe kimchi leaves, mix sesame oil and sesame seeds and spread evenly over the leaves.
STEP 6/9
Place a tablespoon of rice and stir-fried anchovies little by little on top of ripe kimchi.
STEP 7/9
And if you roll it up nicely, you're done with ripe kimchi ssambap.
You can put the remaining ingredients on the plate repeatedly.

My kimchi is kind of spicy
Even if I wash it, there is a little bit of spiciness, so the spicy and sour taste of ripe kimchi and the sweet and salty taste of stir-fried anchovies go well together, making it a great dish that does not need any other side dishes.

I'm going to cook beef bone soup for brunch on the weekend
It's filling because we ate it together^^
I think it would be good to make it like this when you don't have an appetite, and Kim Soo-mi added stir-fried anchovies, but I thought it would be good to use other ingredients.
