I really like kimchi stew. There are many kimchi stews with saury and tuna, but I like kimchi stew with pork the most. I usually put pork for stew, but this time, I made kimchi stew with pork belly. If you add sliced pork belly, the meat oil comes out, making a deeper and deeper soup.

Please prepare rice water first.

I'm going to make kimchi stew with sliced pork belly.
I will boil it in an earthen pot that can be hot for a long time.
Put the sliced pork belly and rice water in an earthen pot and bring to a boil.
I don't stir-fry pork first. They boil it with kimchi and broth, and then put pork at the end. But the pork belly was put in advance of kimchi to make a deeper meat broth.

Remove the scruffy bubbles from the center as they boil.

If it boils and you've removed the bubbles, add kimchi.
I cut it with scissors to make it easier to eat in advance.
Kimchi stew is more delicious when kimchi is delicious.
Most people take care of kimchi stew with sour kimchi, right? It tastes better if you boil it with sour kimchi.

And add some kimchi soup. I put in about 2 spoons. Kimchi soup should be added to make the kimchi taste better and the color looks more delicious.

When it boils up again, add 1 spoon of minced garlic, 2 spoons of red pepper powder, and 1 spoon of soy sauce.

And taste it and season it with salt if it's not enough. I didn't add it separately because it was seasoned.

I brought it to the table as it was boiling and ate it right away with rice. The soup is really thick and deep.
I like it because it's spicy and light.
