STEP 1/10
Carefully peel the outer skin of the new chestnut so that the inner skin does not peel.

Pour enough water to cover the night, add 1T of baking soda, and soak for 12 hours.

Boil the soaking pot for 30 minutes and rinse with cold water.
STEP 4/10
Pour water and boil it for another 30 minutes and rinse it with cold water.
STEP 5/10
Pour water and boil for 30 minutes and rinse with cold water. (Total 3 times)
STEP 6/10
Remove the wick and fine hairs and trim them neatly.
STEP 7/10
Add sugar weighing 60 percent of the chestnut weight, add water to cover the chestnut, and simmer until the sugar water is half boiled down in syrup. (It took about 30 minutes on low heat)
STEP 8/10
When it's almost boiled down, add flavor to it with brewed soy sauce and rum.
STEP 9/10
Store in a hot sterilized glass airtight container.
STEP 10/10
It tastes better if you eat it after 2 to 3 months of aging. Waiting patiently until Christmas!
