Buckwheat noodles (cold buckwheat noodles) simply at home
Clean and cool cold buckwheat noodles. It's good because it's not too much, and it's so good if you eat buckwheat noodles while eating clean broth! Let's make it simple at home! (The correct notation is 'buckwheat noodles'. 'Soba' means buckwheat in Japanese.)

Cooking Steps
STEP 1/11
To make buckwheat broth, first put 3 cups of water in a bowl and add half a cup of tsuyu. I used commercially available tsuyu.
If it's not enough after tasting it, you can add tsuyu.
And I moved it to a container that can be frozen and put it in the freezer. I want to eat it with a bit of ice. But I put it in late, so I couldn't make thin ice.

And grind the radish finely on the grater. There was a lot of green radish left at home, so I can see a little green on the radish I changed.
After grinding, a lot of water comes out of the radish. Squeeze the ground radish with your hands and make it round.
STEP 3/11
Clean the outside with thick salt and rinse it with water before using it. I also peeled the cucumber and used it.
And shred it finely. I like cucumbers, so I added a lot of cucumbers.
Chop the green onions. I used the green onions that were cut in advance and divided into the freezer.

I used this buckwheat noodle because I didn't have buckwheat noodles at home and I used the one that came out (like ramen) so I could eat buckwheat right away.
And they prepared wasabi in advance.
STEP 5/11
It's a buckwheat soba pack, so I boiled the noodles in boiling water for 2 minutes and 30 seconds. While boiling, stir well to loosen the clumped buckwheat noodles. Then rinse with cold water and drain completely.

Now, put the noodles into a bowl!

To make cold buckwheat noodles, we're going to add the ingredients we prepared earlier. Place the cucumber gently on the noodles you put separately. And put the green onions on top. Squeeze the water and put the round radish on top, and squeeze a little bit of raw wasabi on top.

If you put everything in, add the pre-made buckwheat broth and you're done! I put it in the freezer late, so the thin ice didn't freeze..

I cut the seaweed and put the ice cubes in here.
STEP 10/11
I also ate pork cutlet.
Doesn't this really look like a cold buckwheat set.
Add more seaweed to your taste.
It was really delicious with pork cutlet. :)

It's really good if you mix all the ingredients together.
It's refreshing to drink the broth!
