If it's a large size, about 6 webfoot octopus will be enough,

Please trim the vegetables.
Slice the onions thickly, and slice the green onions and red peppers diagonally.
Cut perilla leaves at intervals of 1 to 2 cm.

Wash bean sprouts in water.

Boil water in a pot and blanch the bean sprouts for about 2 minutes when the water boils.
Blanch and drain in a strainer.

Please make the sauce in a bowl of some size.
Add 4 tablespoons of red pepper powder, 3 tablespoons of red pepper paste, 2 tablespoons of soy sauce, 2 tablespoons of cooking wine, 1.5 tablespoons of sugar, 1 tablespoon of minced garlic, 1 tablespoon of oligosaccharide, 1 tablespoon of sesame oil, a little pepper, 1/2 tablespoon of sesame salt and mix well.
Divide the sauce half and half in another bowl.

Please cut the pork belly into bite-size pieces.

Put the pork belly in one sauce and mix well and let it ripen.

Put water in a saucepan, add 1 tablespoon of refined rice wine and a little salt, and bring to a boil.
When the water boils, add the webfoot octopus and blanch it for about a minute.

Cut the blanched webfoot octopus into bite-size pieces.

Mix webfoot octopus in the remaining sauce and let it ripen with pork belly.
Mature time is better than 1 hour, but if you don't have time, you can skip the aging process.

Pour 1 tbsp cooking oil into a heated pan and stir-fry seasoned pork belly and onions first until the meat is almost cooked.

If you don't want to add cheese, stir-fry the pork belly slightly when it is cooked, adding bean sprouts, remaining seasoned webfoot octopus, green onions, and red pepper.
Lastly, you can add sesame leaves, sesame salt, and sesame oil.

If you're going to add cheese, I recommend that you just sprinkle it on top and heat it until the cheese melts, rather than putting it on the bottom of another pan, as shown in the video.
If you sprinkle sesame leaves, a little bit of sesame salt, and a little bit of sesame oil at the end, the stir-fried webfoot octopus pork belly with the best chewy texture in the spicy sauce is complete.
