STEP 1/10
I made bulgogi seasoning myself.
4 cups of soy sauce, 1 apple, 1 onion, 3 tablespoons of minced garlic, 1 tablespoons of minced ginger, 1/2 cups of refined rice wine, 4 tablespoons of plum juice, 3 tablespoons of honey, 1 can of pear drink, 2 cups of beef bone broth.
I'm going to use this sauce to make duck green onion rolls.
STEP 2/10
Cut the green onions into finger-sized pieces and prepare them. I picked green onions from the garden, so they are thinner than the green onions sold at the market. Add one thick green onion and roll it. You can roll a couple of thin green onions like me.
STEP 3/10
It's the basic seasoning for the pork belly. Season with garlic herb salt, pepper, and basil powder.
STEP 4/10
Put a few layers of seasoned duck pork belly and roll it with green onions. Duck meat is oily, so if you press it tightly, it won't open or explode at all.
STEP 5/10
I rolled it up like this.
STEP 6/10
It's a finished duck pajama. I'm going to grill it first.
STEP 7/10
Place one at a time in a pan and grill it evenly on the front and back sides. Use a torch in the middle to slightly smoke it. To give the fire a scent.
STEP 8/10
When it's done, add the bulgogi seasoning and cook it as if it's boiled down so that the bulgogi seasoning is evenly cut. Please boil it down over medium heat, not high heat. You can flip it over and put it on the side.
STEP 9/10
The brownish green onion of the bulgogi seasoning is all cooked. All we have left is to put it on the plate. Cut both ends neatly and cut it in half. Please cut it in half.
STEP 10/10
Stand up on the plate so that you can see the cross section and put them one by one. I made it into a little S shape. I also put cucumber salad and chives in the middle.
You can use cold mustard sauce. It's delicious even if you just eat it. It is sweet and salty because it is boiled down with bulgogi seasoning.
It's done.
