Wash the lettuce palace clean.

Make the seasoning soup.
Put half an onion, three small boiled potatoes, six slices of garlic, 300ml of bottled water, and three tablespoons of soy sauce in a blender and grind them together.

Pour the ground seasoning soup into a bowl (bowl), add 400ml of bottled water, and season with 1 tablespoon of salt. (You can adjust the amount of salt according to your taste.)

Put lettuce in a storage container one by one while soaking it in the seasoning soup. (Do not salt the lettuce)

Pour the remaining seasoning soup into the storage container.

Cut the remaining half of the onion and place it as a garnish and gently press it so that it is soaked in the soup.

It's good to put it in right away, and it's really good to cook it at room temperature overnight (fermented) and store it in the refrigerator.
Usually, vegetables are salted when making kimchi, but lettuce kimchi can be eaten with crunchy and soft texture even if it is not salted. Also, you can make kimchi seasoning with salted fish, but you can make kimchi with only soy sauce (house soy sauce) and salt without salted fish, and the clean and light taste is excellent^^
