Pickled cucumber onion (Korean style cube/onion pickle!)
I bought too many cucumbers, but I thought it would be good to make fresh pickled vegetables, so I made it with onions.

  • Cucumber

  • Vinegar
    1/2cup
  • Soy sauce
    1/2cup
  • Sugar
    1/2cup
  • Water
    1cup
Cooking Steps
STEP 1/11
Please prepare the ingredients.
Always use Korean brand vinegar, this time I tried Costco's vinegar. It was delicious :)

Start boiling soy sauce/water/vinegar/sugar
STEP 3/11
Cut the onion into bite-size pieces
STEP 4/11
Wash the cucumbers clean and cut them into bite-sized pieces
STEP 5/11
Put sliced onions and cucumbers in a jar.
STEP 6/11
When it bubbles, remove it with a spoon
STEP 7/11
Pour the boiled pickle water into a jar containing vegetables while keeping it hot.
STEP 8/11
It doesn't look like a lot of pickled water, but after a day or two, the amount of water increases as the moisture escapes from the vegetables.
STEP 9/11
About a day later: the vegetables were out of breath and the pickles increased.
STEP 10/11
About two days later: The onions were still spicy. Cucumber was perfect.
STEP 11/11
After 5 days, the spicy taste of onions has decreased a lot. I think the two vegetables are a little different from each other, so I'm planning to make onions and cucumbers separately next time
