marsh snail hangover soup
Each region has a different name for marsh snails. It is called Daesa-ri in Jeolla-do, freshwater godong in Gyeongsangnam-do, Godi in Gyeongsangbuk-do, and Olbaengi or Olgaengi in Gangwon-do and Chungcheong-do. Olgaengi is rich in protein, calcium, iron, and vitamin A, which helps hangovers and neuralgia, and it protects the liver and is good for anemia by improving eyesight. In particular, it is known to have an excellent effect on liver disease. It is said that the blue pigment of marsh snails is similar to human liver pigment, showing a mysterious effect on liver disease. I'm going to make marsh snail hangover soup today.

Cooking Steps
STEP 1/11
It's 200g of marsh snails.
STEP 2/11
Rinse 3 or 4 times and drain.
STEP 3/11
Don't throw away the juice from the marsh snail and use it for the broth. This water has a lot of nutrients. It's one cup of paper.
STEP 4/11
Cut chives into 4-5cm lengths and shred onions. Cut the cheongyang red pepper, red pepper, and green onion in a round shape.
STEP 5/11
Pour 4 cups of water into a large earthen pot, pour 1 pack of kelp depot pack, boil it for 15 minutes, and pour 1 cup of marsh snail soup.
STEP 6/11
When the soup starts to boil, take out the kelp dipori pack and add the onion salad.
STEP 7/11
Beat in 2 tablespoons of soybean paste and add 1 tablespoon of minced garlic. Put marsh snails in here. Don't put marsh snails in from the beginning. It's better to cook it lightly. Cook until marsh snails rise
STEP 8/11
Remove the foam and add 1 tablespoon of soy sauce and 1 1/2 tablespoon of red pepper powder
STEP 9/11
Finish by adding chives, green onions, cheongyang red pepper, and red pepper
STEP 10/11
Chives are eaten raw, so it's better to turn off the heat as soon as you put them in. Chives cook well even in the heat of summer.
STEP 11/11
The marsh snail hangover soup is complete.
