STEP 1/6
First, cook the meat in a preheated pan over medium heat for 1 minute
STEP 2/6
The color should come out like in the picture, but if you leave it on medium heat for 2 minutes without turning it upside down, it will come out enough.
Remove from pan and cut meat when color comes out
You can cut it right away from the pan if it's a coated pan
The coating might come off while you're cutting, so I recommend you take it off
STEP 3/6
Put kimchi, garlic, and sugar in the pan where the meat was grilled and stir-fry them over medium heat.
STEP 4/6
When kimchi starts to taste like fried kimchi, add the cut meat.
As I prepare the raw meat myself at home, it is thick because it is cut to the desired thickness, so it shows half-cooked appearance even if it is cooked on the outside and not fully cooked on the inside as shown in the picture.
Normally, if you buy pork neck or pork belly thick, the inside is cooked in the process of showing off
If it looks like me, stir-fry it until the inside is cooked. If not, move on
STEP 5/6
Add the seasonings except for sugar and garlic and stir-fry them until they are boiled down like when making sweet and sour chicken
STEP 6/6
Lastly, add a bit of sesame oil and mix it and put it on a plate
Add 1ts of vinegar for undercooked kimchi and stir-fry until the acidity evaporates.
It tastes like ripe kimchi
