STEP 1/15
Prepare carrots by peeling and washing them clean.

Divide each piece into three pieces and slice them vertically,

Slice it thinly. I highly recommend using a chopping knife.

You have to pickle the carrots. Place shredded carrots in a bowl and sprinkle 1/2 tablespoon of salt.

Mix the shredded carrots well with salt and marinate for at least 15 minutes.

Turn it upside down and let it soak.

If the carrot is well salted for more than 15 minutes, the moisture comes out.

Drain pickled carrots using cotton cloth or kitchen towel.

If you take out the moisture, it looks firm like this.

Put all the seasoning ingredients in a bowl except for parsley
STEP 11/15
Mix well with spoon.
STEP 12/15
Add the firm carrots and mix them with your hands.
STEP 13/15
If mixed, taste it now and add more lemon juice, sugar, and whole grain mustard to taste.

I'd like a tablespoon of parsley, please.

If you mix it well, it's done. Raw parsley is better. If you don't have any, you don't need parsley^^
It goes well with other dishes such as bread and salad^^
