STEP 1/15
Place all ingredients except butter in a mixing bowl.

Mix for 2 minutes at low speed and 3 minutes at medium speed.

When the dough is lumped together, add butter.

Mix for 2 minutes at low speed and 6 minutes at medium speed. Hold the gluten 100%.

Ferment dough at room temperature for about 50 minutes.

Divide the dough by 300g and roll it.

Let it rest for 15 minutes.

Remove the gas by rolling the dough with a rolling pin.

Fold the dough into 3 sections and roll it back with a rolling pin. Then roll it gently from one side.

Place 4 loaves of dough in a large bread mold (330125125).

Press lightly so that the dough adheres well to the floor.

Ferment at room temperature for about 50 minutes.

Bake in a preheated oven at 165 degrees for about 35 minutes.

Remove from oven and shock bread pan slightly.

Spread melted butter while bread is hot.
